Butternut Squash and Apple Soup

Ingredients:

1 medium butternut squash
3 granny smith apples, diced
1 medium leek, sliced
1/4 tsp. dried rosemary
1/4 tsp. dried marjoram
5 - 5.5 c. chicken or vegetable stock
3.5 c. water
2 slices white bread
1 tsp. salt
1/4 tsp. pepper
plain Greek yogurt
dash of nutmeg
fresh parsley, chopped

Directions:

Halve the butternut squash and scoop out seeds in the center.
Combine squash, apples, leek, rosemary, marjoru, stock, water, bread, salt, and pepper in a large saucepan.
Bring to boil and simmer for 45 minutes or until squash is soft.
Remove the squash and scoop out all of the pulp from the skin. Add pulp back to saucepan.
If excess liquid, continue to simmer for 15 minutes or until desired amount of liquid remains. (Recommended to reduce liquid in saucepan by at least half of original amount.)
Blend entire contents of saucepan until mostly smooth using a blender. If necessary, split the contents up into multiple batches.
Scoop into individual bowls. Add a dash of nutmeg, a dollop of Greek yogurt, and chopped parsley (garnish) to each bowl. Serve hot.
