At an open house you rarely will see an entire meal served. Some do go crazy and offer an entire buffet style dinner, but most will serve heavy appetizers for guests to enjoy. Cinnamon Fruit Skewers

Ingredients:

1 package 6" skewers
1/4 cup cinnamon oil
2 cups diced fruit (apples, pears, or whatever you like!)

Directions:

Soak the skewers in water for 1 hour. Towel dry.
Preheat broiler. Carefully skewer all of the fruit alternating types.
Lay out the pre-soaked skewers on a broiler-safe pan. Brush each of the skewers with cinnamon oil.
Broil fruit skewers for 30 seconds to 1 minute on each side.

Tomato Bruschetta

Ingredients:

3 1/2 Tbsp extra-virgin olive oil
1 tsp minced garlic
Eight slices (1/2" to 3/4" thick) Italian bread
1 lb (about 6) ripe plum tomatoes, seeded and diced
1/4 cup chopped fresh basil leaves
1/2 tsp salt
Freshly ground black pepper, to taste
1/4 cup coarsely shredded Parmigiano-Reggiano cheese

Directions:

Heat oven to 450°F. Line baking sheet with foil.
Mix 1 1/2 Tbsp oil and 1/2 tsp garlic in a large bowl. Brush both sides of bread with oil mixture and place on lined baking sheet. Bake 5 minutes, or until lightly toasted on middle oven rack.
Meanwhile, in same bowl, combine remaining 2 Tbsp oil and 1/2 tsp garlic, the tomatoes, basil, salt and pepper.
Top toasted bread with tomato mixture; sprinkle with cheese.
Heat bruschettas in oven for a few additional minutes until cheese is melted and tomatoes just barely softened.

Ingredients:

12 oz. frozen apple juice concentrate, thawed
12 oz. frozen cranberry-apple juice concentrate, thawed
6 oz. frozen lemonade concentrate, thawed
5 sticks cinnamon
7 whole cloves
9 cups water

Directions:

In 4 quart kettle or saucepan, combine all ingredients and bring to a boil
Reduce heat and simmer 15 minutes.
Remove cloves and cinnamon and discard. Serve hot.
